I put more thought into breakfast than I put into most meals. It’s important to fill big and little bellies with protein, fiber, and wholesome food. I have found a new breakfast food, made in Vermont, to share with you!
Introducing Breakfast Couscous from Journey’s Table in Burlington, VT. Owner Jolyn Wijetunga sent my families the three varieties above to taste test. We can’t choose a favorite because we enjoyed all of them so much! With 6 grams of fiber and 8 grams of protein per serving our bellies stayed full and happy for a long time.
Jolyn tells us why she started this business: “My most important reason for starting Journey’s Table is that I see a need in our world for the belief in and experience of a good breakfast. And what I mean by that is the moment of breakfast, however short and fleeting that may have to be. My motto – Good Breakfast. Good Morning – really embodies this idea. A good breakfast, not only provides for our physical nourishment but also the nourishment of our hearts and minds as we prepare for our day. It is a treasure if we can linger over that moment but, more often than not, we are running out the door.”
Couscous has a wonderfully fluffy and light texture. Mixed with dried fruit and nuts makes this breakfast balanced and complete. Cranberry and apricot with almonds tasted comfortable and familiar. The dried fruit was sweet and refreshing.
Dried blueberries are my favorite dried fruit! They are especially sweet and they pair perfectly with the bold flavor of pecans. This warm breakfast did not need any additional sweeteners.
Have you tried currents? They are a small and flavor packed raisin. Together with apples and walnuts this breakfast was a bit hit all around. Jolyn describes her breakfast couscous as “a delicious combination of regular and whole wheat couscous, dried fruits, nuts, flax seed, shredded coconut, and the light sweetness of turbinado sugar”.
